easy cooking 1,2,3...

Since I will be out of commision for about 6 weeks after the baby is born my husband will be responsible for feeding us...I am looking for some VERY EASY recipes that he can use. As of now he can make 1 dish- Chicken baked with rice and mushroom soup. It is tastey but I cannot imagine eating it everyday for the a whole 6 weeks!!!
I do plan on making a few things and freezing them so that we do have some good food to eat and I'm sure my parents will be able to help out a bit in the kitchen too but now is probably a really good time for hubby to learn to cook anyway!!
any suggestions PLEASE????

  1. OK, here are a few easy things I make after work, with Zoƫ hanging off my leg...so I am sure Gavin can manage them!!! No measuring even for most of them!!! I use Pam for all my stir frying and browning.

    Singapore rice or noodles:
    -Stif Fry diced chicken (or tofu, or fake chicken) in wok while boiling rice or noodles.
    -drain the rice or noodles, then throw them in the pan. Throw in a couple handfuls of frozen veggies.
    -Quickly stir fry all the stuff together, while mixing in some soy sauce and curry powder to taste.

    Fake chinese fried rice
    -Stir fry some sliced and diced chicken in a wok
    -dump in 1 cup of vegetable broth (I use 1 cup boiling water and a teaspoon of organic soup powder) and 1 cup of minute rice, throw in a handful or 2 of frozen veggies.
    -cover, and let simmer for about 5 minutes.
    -at the end, I push it all to the sides, break on egg in the middle, let it cook a little and mix it up with the rice until the rice is coated with cooked egg...adds protein, iron and authenic chinese taste!!

    Israeli Couscous
    (Available at any kosher section)
    -brown a small diced onion in a pot.
    -throw in 1 cup of dry couscous and mix around for a couple minutes, until they are slightly browned.
    -drop in 2 cups of veggie broth, and a handful of frozen veggies.
    -Cover and simmer for about 8 minutes, until water is absorbed.

    Quick Salmon recipes
    -Hoisen sauce and sesame seeds
    -brown sugar mixed with some water and soy sauce until it is pasty
    -maple syrup
    -equal parts mustard and honey
    Brush any of the above over fresh or defrosted Salmon Filets, bake at 400 for about 20 minutes.

    asparagus
    Trim ends of a bunch of asparagus, Quickly pan fry in a mixture of water, with a drop or oil (sesame works well) until bright green.Toss with a teaspoon of soy sauce and sesame seeds.

  2. Here are s few that I hope will help :) I don't measure my stuff, so it's pretty easy and a no brainer!

    BAKED PASTA- very easy!
    -boil pasta (rigatoni works nicely)
    -add a few drops of olive oil and some minced garlic to a baking dish
    -preheat oven to 350
    add a layer of tomato sauce (I make everything homemade, but Gav can use any bottled or canned sauce)
    -add a layer of boiled and drained pasta to the dish
    -layer sauce
    -layer pasta
    -cheese to top
    -bake for 35-40 mins.
    John just LOVES this dish. I sometimes sprinkle the top with Italian breadcrumbs and I serve it with a nice salad with a balsamic vinaigrette (For the baked pasta, you can have meat in it, but if you don't want to mix dairy and meat, don't use it)

    EASY RICE CASEROLE
    -boil rice
    -add a packet of chicken noodle soup mix and some more water
    -in a skillet, sautee onions, celery, carrots
    -add to rice while still cooking
    Presto change-o! You have a meal. Serve with broccoli as a side dish

    SALMON ROLL UPS
    -combine in a bowl, 1 can salmon, 1 tbsp mayo, salt and pepper
    -take a tortilla shell (I use whole wheat), cover shell with raw spinach
    -spread a spoonful of the salmon mixture and cover the spinach and tortilla evenly
    -roll up the tortilla into a tube
    -slice up the tortilla into small segments
    *Looks really pretty,,almost like sushi rolls. The pink from the salmon and the green from the spinach are gorgeous. One roll makes 6 little rolls, so this recipe goes a long way.

    I made this for John's lunch today. It took me less than 10 minutes and I served it with grape tomatoes (you also have some of your 'power foods' there with the salmon (omega3), spinach, and tomato and whole wheat)

  4. Dina, do you guys own a slow cooker/crock pot? I got one at my bridal shower and I cannot live without it!! They're the easiest things to use and Gav can just throw in his ingredients in the morning before work and set the slow cooker and when he gets back home from work, the meal is ready!! It's amazing! Cooks amazing meals all day while the cooks away!!

    It comes with a cookbook and there are some good recipes in there.

    If you don't have a crock pot, here are a few other easy recipes:

    MACARONI SALAD:
    This is John's specialty- he makes an awesome macaroni salad! And this is soooo easy and cheap to make!
    -boil pasta (use elbow pasta for this)
    -chop up onion
    -dice green pepper, red pepper and celery
    -drain pasta
    -add veggies to pasta
    -mix in a can of tuna
    -add a bit of mayo
    -salt and pepper to taste
    -combine all ingredients
    Et voila! Super easy.

    MEATLOAF
    J's a meat and potatoes guy so occasionally I have to cook him some meat!
    -preheat oven to 350
    -in a bowl, mix together ground beef, one egg, Italian breadcrumbs
    -put mixture in baking pan
    -pop into oven for 35-40 mins
    Easy as pie!! Gav can serve this meatloaf with rice and a nice salad.

    This mixture can also be used for hamburgers, meatballs, etc. It's very versatile!

    Yeah, I set mine on low and leave it all day. Wake up, prepare the stuff for the crock pot, get ready for work, and am out the door. I WAS a bit worried about leaving an appliance on all day unattended, but crock pots were made for...well...slow cooking!!

    My SIL2B works at the hospital on the island (in the next big town from us) and is gone early in the morning until 6:30 in the evening. She does the same...sets the crock pot before work and when she comes home, her family has a delicious meal ready.

    *Just watch how many hours for what kind of food you're cooking. A lot of the recipes are 3-5 hrs on high or 6-8 hrs on low. It may seem like a long time, but everything is just so tender and moist :) The flavor really comes out too!
